Beautifully coloured radicchio (rah-deek-ee-oh) is a very versatile bitter sweet chicory that can be used raw or cooked. Add to salads for a colourful taste that will give your salad a lift.
Use to wrap salad ingredients for a full bodied taste sensation. Radicchio combined with or a leaf filling of avocado, celery, capsicum, greens, lettuce, cucumber and tomato sprinkled with lemon is yum. Try adding karengo fronds for that extra special taste.
The bitter sweet taste of radicchio goes particularly well with avocado and like all bitter vegetable stimulates healthy bile production and is great for the liver and gall bladder.
