Organic garlic is available from January onwards. Sometimes organic green garlic is available before Christmas. Planted late autumn these are grown throughout the winter months forming a bulb ready for harvest early January onwards. Once mature the bulbs are harvested and stored for usage. Organic garlic will store well in warmer to cooling temperatures but when the season turns from cool to warmer stored organic garlic at room temperature will start to sprout. For this reason NZ organic garlic is not available from late July through to December.
