Using a selection of varieties organic cauliflower can be harvested throughout the year. Some varieties mature in 3½ months others up to 5 months. In the autumn different maturing varieties of cauliflower are planted at a similar time to spread picking throughout the winter and early spring months. But weather patterns can alter maturity dates so sometimes there is a shortage and at other times a surplus not matter how well planned. An organic cauliflower must be picked as soon as it is ready and will not hold on the plant for more than a few days if that.
