Using a selection of varieties organic cauliflower can be harvested throughout the year. Some varieties mature in 3½ months others can take up to 5 months. In the autumn different maturing varieties of cauliflower are planted at a similar time to spread picking throughout the winter and spring seasons. However weather patterns can alter maturity dates so sometimes there is a shortage and at other times a surplus not matter how well we plan. An organic cauliflower must be picked as soon as it is ready and will not hold on the plant for more than a few days if that.
Cauliflower is a rich source of vitamin C, B complex vitamins, folate, vitamin K, and vitamin E. It also provides essential minerals such as calcium, magnesium, phosphorous, potassium, zinc and iron. It is a good source of protein, has a substantial amount of phytochemicals, unsaturated fats, and essential omega-3 fatty acids.
